spicy cheeseburger dip

the #1 requested dish at parties... and it is SO easy! especially in the crockpot!

1 lb of cooked beef
1 lb of velveeta cheese
1 cup of shredded mozzarella cheese
1 can of rotel diced tomatoes with chilies
green onions/scallions
if you love spicy, then you should also throw in some red pepper flakes :)

mix all of that together in the crockpot on high for about an hour. SO good!

Farro w goat cheese & veggies (healthy)

healthy and yummy!



-Farro (the grain that I used) - you can get it by the rice and couscous in either Trader Joe's or Wegman's
-chicken broth
-olive oil
-fresh cheese - i used goat cheese but really, any soft and creamy cheese will work. If it's not a really soft/melty cheese, just make sure that it's at room temperature or that you microwave it for a couple of seconds before you add it to the farro. I used 4 ounces
- orange zest
-a big bunch of chopped basil 
-veggies i used: red onion, yellow pepper, green pepper but you can use anything really.
 
 
1. Cook the farro according the directions on the package, but substitute some of the measured water for a cup or so of chicken broth. Also add salt and a tablespoon or two of olive oil to the boiling water.  

2. After farro is cooked (you do not drain it) add the cheese and a tablespoon or so of olive oil. Mix it gently until all of the cheese is mostly melted and combined. Then, grate the orange zest into the farro, and mix again. Then, add basil and whatever veggies/fruit/herb combination you're putting in, and mix it. Taste it and add salt/pepper/red pepper, if it needs it.

Cannoli cupcakes!!

CANNOLI CUPCAKES!! SOOOOOOOOO GOOD!!!
Took a long time to make but totally worth it. Yummy!!
I used fat free ricotta and less butter than the recipe called for, so I consider them some what healthy LOL
Although vanilla bean is very expensive it made a huge difference in the taste of the frosting!
I tweeked the recipe I found online, but the design idea, well, that was all me :) :)




Buffalo chicken eggrolls

buffalo chicken eggrolls are my go-to. No real recipe.
I mix shredded cheddar cheese with blue cheese cumbles, ranch dressing, and hot sauce (enough to fill the number of eggrolls you are making), add some broccoli slaw for crunch and then top it off with shredded chicken marinated in hot sauce. Then fold up the egg roll wrappers like a burrito and bake for about 15 minutes. Oh, you gotta spray the outside of the eggrolls with pam before you put them in the oven so they brown instead of burn. Done and done! :)

Lemon cupcakes w blackberry buttercream frosting. Delicious!!!

These were an unexpected HUGE hit at work! I got so many compliments, and even some requests to make more. I think I had more fun making them pretty than eating them though lol

The hardest part was pureeing (is that a real word?) the blackberries and sifting out the seeds. Other than that, it was cake! Pun intended :)

Chocolate Cake with Coffee Buttercream

My fabulous coworker Allison made this cake for Easter...
Her recommendation is add the coffee and vanilla during the cooking process. Other than that she followed the recipe exactly, including freezing the layers before frosting. No way to frost them otherwise.

Sun-dried tomato turkey meatballs

I used two diff recipes for this dinner. The turkey meatballs I found on pinterest, and the sauce is Giada's. Both recipes are below. Enjoy!

Note: don't bake the meatballs for as long as the recipe says... I also used basil and EVOO infused sun-dried tomatoes, instead of just plain ones.

Christmas Tree Brownies

I made these for my coworkers for Christmas 2012...
Nothing crazy, just brownies, m&m's, candy canes, and frosting with green food coloring!

Impromptu white pizza

No recipe for this one... but in looking at the picture, I used ww flour for the crust (I always spread EVOO mixed with garlic salt on the dough prior to topping on the ingredients), fresh spinach, shredded mozz, ricotta, fresh tomatoes, and garnished with oregano and red pepper flakes.

A little secret for the tomatoes: after slicing them, place them on a paper towel, and place another paper towel on top. Replace the paper towels once or twice while the dough is rising and this dries out the tomatoes so there is no juice. This prevents the pizza from getting soggy during/after baking :)

Garlic Parmesan shrimp

I forget what recipe I used... if any at all... but I included one at the bottom, just in case you were clueless!


Chicken and 3 cheese stuffed shells

Recommendation after making it a second time: in addition to spreading remaining sauce on top of the stuffed shells, also spread some of the extra cheese mixture on top as well. It made a big difference from the first time I made them! Never enough cheese!!!!! Haha


Reese's Rice Krispie treats

warning: these are AMAZING!!!! every. single. time.


Reeses Chocolate Peanut Butter Rice Krispie Treats
     6 cups Cocoa Krispies Cereal
     16-18 Reeses Peanut Butter Cups, diced
     5 Tbs butter or margarin
     3 Tbs light karo syrup
     1 (10 ounce) package plus 2 heaping cups miniature marshmallows
     1/3 cup peanut butter
     1/2 cup chocolate chips

In a large bowl, combine cereal and diced Reeses. Set aside. Spray a 9 x 13 in. pan with cooking spray and set aside.

In a large pot melt butter over low heat. Add karo syrup and marshmallows and stir continuously until mixture is smooth. Remove from heat and add cereal mixture into the pot and fold together just until cereal is evenly coated. (Peanut butter cup pieces will fall apart as you fold together your ingredients, so don't over mix this.) Press mixture into the sprayed 9 x 13 in. pan. Set aside.

In a small microwave safe bowl, add peanut butter. Microwave for 30 second to a minute to melt. Set aside to let cool slightly. In a separate small microwave safe bowl, melt chocolate at 30 second intervals, stir between intervals, until smooth. Set aside to let cool slightly.

When peanut butter is cool enough to handle, transfer into a small zip lock bag. Clip a small piece out of the corner and pipe onto rice krispie treats, zig-zagging back and forth. Repeat steps with chocolate, placing in a small zip lock bag, and piping over the peanut butter. Either let treats sit at room temperature to allow chocolate to set up, or you can pop the pan into the fridge for about 5 minutes to speed up the process. Cut and serve.

Makes a 9 x 13 in. sheet of treats.

Moscato cupcakes

These were surprisingly very moist! Plus I had fun with the frosting, as you can see! I made them twice; once for coworkers, and again as mini cupcakes for a birthday party.

Twinkie cupcakes

do NOT use the frosting recipe they provide on the website. make your own. theirs became my first epic fail in the kitchen and basically broke my mixer.

Irish car bomb cupcakes

These were BY FAR the best cupcakes EVER. I made them twice; once for a birthday party and again for st patty's day. They were a huge hit!

Let it be known - they are extremely challenging and tedious to make. But of course totally worth it :)

My recommendation: you can double the whiskey and the baileys, but NOT the guinness. You don't want to mess with batter... ever.

Cucumber turkey sandwich ... No carbs

no recipe... just cut a cucumber down the middle and scoop out the seeds. place lunch meat and cheese in the centers where the seeds were... i used fat free turkey and goat cheese. you could also use laughing cow cheese if you are not as obsessed with goat cheese as i am. these are nice because there are no carbs but they are crunchy and fresh so its "fun".
